is it really a 熟字訓?

the word 景色 in japanese is generally been considered as a onyomi(音読) word.
け is short for けい(景),and しき is for 色.
now i wonder why it is been considered as a 熟字訓 here

What you say is correct. "けしき" is merely an on'yomi of "景色", not "熟字訓".
